These easy mini banana pancakes are a quick and fun breakfast made with just three simple ingredients: ripe banana, egg, and oat flour.
Each banana slice is coated in a light pancake batter and cooked until golden, creating soft, naturally sweet little bites that are perfect for breakfast, brunch, or a kid-friendly snack.

Yield: 1 serving
Prep Time: 4 minutes
Cook Time: 7 minutes
Total Time: About 11 minutes

Ingredients
- 1 ripe banana
- 1 large egg
- 3 tablespoons oat flour
- Butter or neutral oil, for greasing the skillet
Optional for serving:
- Honey or maple syrup
- Ground cinnamon
- Chopped pecans
- Fresh berries
Instructions
1. Peel the banana and cut it into small rounds, about ¼-inch thick.
2. In a small bowl, beat the egg well with a fork.
3. Add the oat flour and mix until you have a smooth, slightly thick pancake batter.

4. Heat a nonstick skillet over medium-low heat and lightly grease it with butter or a little neutral oil.
5. Dip each banana slice into the batter, making sure it is coated on both sides.
6. Carefully place the coated banana slices in the warm skillet, leaving a little space between each one.
7. Cook for about 1 minute, or until the bottoms are lightly golden.

8. Flip each mini pancake and cook for another minute, until golden on both sides and the batter is cooked through.
9. Transfer to a plate.

Serve warm with a drizzle of honey or maple syrup, a sprinkle of cinnamon, chopped pecans, or fresh berries if you like.

Make It Your Own
These little pancakes are really easy to customize. Add a pinch of cinnamon or a splash of vanilla extract to the batter for extra flavor, or serve them with peanut butter, Greek yogurt, berries, or a few chocolate chips for something a little more indulgent.
If the batter seems too thin, add a little extra oat flour, especially if your egg is particularly large.
I love how something as simple as a banana can turn into such a fun little breakfast. These mini pancakes are warm, soft, naturally sweet, and especially good straight from the skillet while they are still golden and fresh.
