Soft and Creamy Crepes with Fresh Mango, Greek Yogurt & Honey.

Ingredients (Serve 4):
For the Crepes
- 1 ripe mango
- 4 tablespoons plain Greek yogurt
- 1 whole egg
- 3 egg whites
- 3 heaping tablespoons tapioca starch
- Olive oil or butter for greasing the pan
For the Filling & Topping
- Ground cinnamon, for sprinkling
- Honey, for drizzling (optional)
Instructions:
1. In a medium bowl, whisk together the whole egg and egg whites until well combined. Add the tapioca starch and whisk until smooth and lump-free.
The batter should be light and slightly thin so the crepes stay delicate and soft.

2. Heat a nonstick skillet over low heat and lightly grease it with olive oil or butter. Spray olive oil works especially well because it evenly coats the pan without using too much.
3. Pour a small ladle of batter into the skillet, just enough to lightly coat the bottom of the pan in a thin layer. These crepes are meant to be delicate and thin, so avoid adding too much batter. Cook for about 1 minute, or until the crepe is set and starts lifting easily from the pan. If needed, carefully flip and cook the other side for a few more seconds until lightly golden.

4. Transfer the crepe to a plate and repeat the process with the remaining batter. This recipe makes about 4 thin crepes.
5. Peel the mango and cut it into thin slices or small chunks. You can also mash it lightly with a fork if you prefer a softer, creamier filling.
6. Lay each crepe flat on a plate. Add a generous spoonful of Greek yogurt to the center, then top with fresh mango pieces. Lightly sprinkle with cinnamon for extra flavor and warmth.

7. Roll the crepes gently and place them seam-side down on a serving plate.
8. Once all the crepes are filled and rolled, sprinkle with a little more cinnamon and drizzle with honey if desired.

9. Serve immediately while soft and fresh.
