Ingredients:

  • 4 large eggs
  • 1½ cups (250 g) grated carrots
  • ¾ cup (150 g) brown sugar
  • ½ cup (100 g) coconut oil, or oil of choice
  • 2 cups (220 g) oat flour
  • 1½ teaspoons baking powder
  • ¾ cup (120 g) dark chocolate chopped

Instructions

1. Preheat your oven to 350°F (180°C). Prepare a round cake pan or bundt pan. If the pan is not nonstick, grease it well with butter and lightly dust with flour to prevent sticking.

2. Add the eggs, grated carrots, brown sugar, and coconut oil to a blender. Blend until smooth and creamy.

3. Pour the mixture into a large bowl and gradually stir in the oat flour and baking powder until fully combined.

4. Pour the batter into the prepared cake pan and spread it evenly.

5. Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.

6. Remove the cake from the oven and let it cool slightly before transferring it to a serving plate.

7. Place the chopped dark chocolate in a microwave-safe bowl or melt it using a double boiler. If using the microwave, heat in 20-second intervals, stirring between each one until smooth and glossy.

8. Spoon the melted chocolate over the cake and spread it evenly across the top. Let it set slightly before slicing and serving.
