Ingredients (serve 3-4):

  • 2 cups fresh strawberries, chopped
  • 1 cup heavy whipping cream
  • 3 tablespoons sugar (1 tablespoon for the strawberries + 2 tablespoons for the whipped cream)
  • 1 cup Lotus Biscoff cookies, roughly crushed

Step-By-Step / Instructions

1) Place the chopped strawberries in a bowl and add 1 tablespoon of sugar. Mix well and let them sit for about 10 minutes to release their natural juices.

2) In a separate bowl, beat the heavy whipping cream with 2 tablespoons of sugar until soft peaks form. Be careful not to overwhip.

3) Roughly crush the Biscoff cookies using your hands or a rolling pin. You want texture, not fine crumbs.

4) In serving glasses, layer in this exact order: Sweetened strawberries ;Crushed Biscoff cookies; Sweetened strawberries; Whipped cream; Crushed Biscoff cookies; Whipped cream.

5) Finish the last layer with strawberries, then drizzle some Biscoff spread on top for an extra indulgent touch (optional)

6) Serve immediately or refrigerate for 30–60 minutes.
