Ingredients
- 1 packet strawberry gelatin
- 2 cups hot water (500g)
- 7 oz / 200g plain Greek yogurt or skyr yogurt
- 1 cup fresh strawberries, washed and hulled
Instructions
1) Add the strawberry gelatin powder to a large mixing bowl. Pour in the hot water and stir very well for 1 to 2 minutes, or until the gelatin is completely dissolved.
2)Add the skyr yogurt and fresh strawberries to the dissolved gelatin mixture. You can use plain skyr, Greek yogurt, or any yogurt you prefer.


3) Using an immersion blender, blend everything very well until the mixture is smooth, creamy, and evenly pink. Make sure there are no large pieces of strawberry left.
4) Divide the mixture between small individual cups, or pour it into one large serving bowl.
5) Place the cups or bowl in the refrigerator for 3 to 4 hours, or until the dessert is fully set.


6) Serve chilled as a refreshing summer snack, a light healthy dessert, or an easy treat for BBQs, pool parties, and summer gatherings.
