  • Soy cream or cottage cheese, to taste
  • Juice of 1 lemon
  • 1 cup shredded cheese (about 100g)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons tomato paste

Instructions

1) Season the chicken breasts with lemon juice, salt, black pepper, paprika, and garlic powder. Let them sit for a few minutes so the flavors can absorb.

2) Drizzle a little extra virgin olive oil into a large skillet or pot over medium heat.

3)Add the chicken breasts and sear them well on one side until golden. Turn them over and brown the other side as well.

4) Pour in the white wine to deglaze the pan, then lower the heat.

5) After about 5 minutes, add the soy cream or cottage cheese, the spinach, and the tomato paste. Stir gently so the sauce starts to come together.

6) Taste and adjust the seasoning if needed with a little more salt and pepper.

7) Sprinkle the shredded cheese over the top, cover the pan, and let it cook until the cheese melts and the sauce becomes creamy.
