Crispy Salmon Rice Paper Rolls

Ingredients:
- 3 rice paper sheets
- 1 cup mixed frozen vegetables (peas, yellow bell pepper, soybeans, red bell pepper, green bell pepper, leek)
- 1 carrot, grated
- 1 salmon fillet
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- 1 drizzle olive oil
- 1 egg, beaten (for brushing the rolls)
- Soy sauce (store-bought), for serving
Step-By-Step
1. Season the salmon fillet with salt and garlic powder.
2. Heat a frying pan over medium heat and add a drizzle of olive oil. Sear the salmon on both sides until lightly golden. Remove it from the pan and set aside.
3. In the same pan, add another small drizzle of olive oil.
4. Add the frozen mixed vegetables and the grated carrot. Season with salt, black pepper and garlic powder to taste.
5. Return the salmon to the pan. Using a fork, gently flake the salmon into small pieces and mix it with the vegetables.

6. Cook for a few minutes until the vegetables soften. Turn off the heat and set the filling aside.
7. Fill a shallow bowl or plate with water. Dip each rice paper sheet briefly into the water to soften it, then place it on a flat surface. Let the excess water drain off.
8. After a few seconds, the rice paper will become soft and flexible. If it still feels firm, simply wait a little longer, there’s no need to dip it again.
9. Place some of the salmon and vegetable filling in the center of the rice paper. Be careful not to overfill the sheet, otherwise it will be difficult to roll.
10. Fold the sides over the filling and roll it tightly, applying light pressure to keep everything together. Repeat the process with the remaining rice paper sheets.
11. Brush each roll with the beaten egg to help them become crispy when cooked.

12. Place the rolls in the air fryer and cook for about 7 minutes, or until lightly golden and crispy. This step is optional, but it adds a delicious crunchy texture.
13. Serve the rolls warm with soy sauce for dipping.
