- 12.3 oz / 350g penne pasta
- Water, enough to cover the pasta for cooking
- 3 large eggs, hard-boiled
- 2 cans tuna in olive oil, drained (about 8.5 oz / 240 g )
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives
- 1 cup mini mozzarella balls, drained (about 5 oz / 140 g)
- Olive oil, to taste
- Balsamic glaze, to taste
- Fresh parsley, for garnish
Step-by-Step Instructions:
1) Bring a pot of water to a boil, using enough water to fully cover the pasta. Add the penne and cook according to the package instructions until al dente. Drain well and let it cool slightly.
2) While the pasta cooks, boil the eggs until hard-boiled. Once done, peel them and slice into halves or rounds.
3) Halve the cherry tomatoes, drain the tuna, drain the mozzarella, and set aside the black olives.
4) Place the cooked penne in a large bowl. Add the tuna, cherry tomatoes, black olives, and mozzarella balls. Toss gently so everything is evenly combined.
