Banana Nutella Rice Paper Pockets

These Banana Nutella Rice Paper Pockets are a quick and easy air fryer dessert with a crispy outside and a warm, gooey banana and Nutella center. They’re made with just a handful of simple ingredients and take about 25 minutes from start to finish.

The rice paper wrappers are dipped briefly in an egg and milk mixture, filled with sliced banana and a generous spoonful of Nutella, then air fried until golden and crisp.

Ingredients

  • 4 round rice paper wrappers
  • 1 medium ripe but firm banana, cut into about 24 slices
  • 1 large egg
  • 1/3 cup (80 ml) milk
  • 1/4 cup Nutella (4 tablespoons), using about 1 generous tablespoon per pocket
  • Powdered sugar, for serving, optional
  • Extra Nutella for drizzling, optional

Instructions

1. Crack the egg into a wide, shallow plate or bowl. Add the milk and whisk well with a fork until the egg and milk are completely combined.

2. Peel the banana and slice it into rounds. You should have about 24 slices, enough to use approximately 6 banana slices in each rice paper pocket.

3. Take one rice paper wrapper and briefly dip it into the egg and milk mixture, coating both sides. Leave it in only long enough for the wrapper to begin softening. Do not soak it for too long, because rice paper continues to soften as it sits and can become difficult to fold if it gets too wet.

4. Transfer the softened rice paper wrapper to a clean flat plate or work surface.

5. Arrange about 6 banana slices in the center of the wrapper, keeping the filling away from the edges so you have enough room to fold the rice paper securely.

6. Spoon 1 generous tablespoon of Nutella over the banana slices. Try to keep most of the Nutella toward the center so it is less likely to leak out as the pocket cooks.

7. Fold the bottom of the rice paper over the filling. Fold both sides inward, then fold the remaining top section over everything to create a compact rectangular pocket, similar to folding an envelope. Gently press the folds together so the filling is completely enclosed.

8. Repeat with the remaining rice paper wrappers, banana, and Nutella until you have 4 filled pockets.

9. Place air-fryer-safe parchment paper in the air fryer basket or tray and immediately arrange the pockets on top, seam-side down. Leave a little space between them so the hot air can circulate around each one. Never run the air fryer with loose parchment paper in the basket without food weighing it down.

10. Air fry at 355°F (180°C) for about 15 minutes, carefully flipping the pockets halfway through cooking. If your air fryer only adjusts in 10-degree increments, you can use 360°F.

11. Continue cooking until the rice paper pockets are golden and crisp on the outside. Air fryers can vary, so start checking them during the final few minutes.

12. Carefully remove the pockets from the air fryer and allow them to rest for 2 to 3 minutes before eating. The Nutella inside will be very hot immediately after cooking.

13. Serve warm as they are, or finish with a light dusting of powdered sugar and an extra drizzle of Nutella.

The outside should be golden and crisp, while the inside stays soft, warm, and filled with melted chocolate-hazelnut spread and sweet banana.

Tips for the Best Rice Paper Pockets

Use a ripe but still firm banana. The banana I used still had a green peel, as you can see in the photo, but it was ripe and sweet inside. A very overripe banana can become too soft during cooking and release more moisture into the rice paper.

Do not over-soak the rice paper. It only needs enough time in the egg mixture to become flexible enough to fold. It will continue softening while you add the filling.

Keep the banana and Nutella in the center and avoid overfilling the pockets. This makes them much easier to close and helps prevent the Nutella from escaping while they cook.

Give each pocket a little room in the air fryer. When they are touching one another, the sides may stay softer instead of becoming crisp.

These are at their best served warm, when the outside is crisp and the Nutella inside is still creamy and melted.

Make It Your Own

One of the things I love about these little rice paper pockets is how easy they are to change depending on what I have at home.

For a little extra warmth, sprinkle a pinch of cinnamon over the banana before adding the Nutella. Banana, chocolate, and cinnamon work beautifully together.

You can also add a few finely chopped hazelnuts for a little crunch, or use your favorite chocolate-hazelnut spread instead of Nutella.

If you love the combination of peanut butter and banana, spread a small amount of peanut butter over the banana before adding the Nutella. Just be careful not to add too much filling or the pockets will be harder to close.

For serving, I usually keep things simple. A little powdered sugar looks beautiful, and a thin drizzle of warm Nutella makes these feel like a proper dessert without adding any extra work.
