Easy No-Bake Peanut Butter Energy Bites

When I need a quick homemade snack, these no-bake peanut butter energy bites are one of my favorite recipes to make. They are sweet, chewy, and made with simple ingredients like oats, peanut butter, honey, and chocolate chips.

The mixture takes only about 10 minutes to prepare, and there is no baking involved. Just mix, roll, and chill for an easy snack you can keep in the refrigerator throughout the week.

Ingredients:

  • 1 cup rolled oats
  • ½ cup natural creamy peanut butter
  • â…“ cup honey or agave syrup
  • ½ cup dark chocolate chips or chocolate chunks
  • Pinch of salt
  • ¼ cup chia seeds, optional
  • 1 teaspoon vanilla extract, optional
  • 3 tablespoons seed and nut granola, optional

Instructions

1. Add the rolled oats, chia seeds, salt, chocolate chips, and granola to a large mixing bowl. Stir everything together so that the smaller ingredients are evenly distributed throughout the oats.

2. Add the creamy peanut butter to the bowl. Use a sturdy spoon or spatula to begin working the peanut butter into the oat mixture. The mixture may still look slightly dry at this stage, but it will come together once the honey is added.

3. Add the honey and vanilla extract, if using. Stir thoroughly until all the ingredients are well combined and the mixture forms a thick, sticky dough. Make sure there are no dry pockets of oats remaining at the bottom of the bowl.

4. The mixture should be sticky enough to hold together when pressed between your fingers. When it feels too soft or sticky, add a small amount of rolled oats. When it feels too dry or crumbly, add another spoonful of peanut butter or a small drizzle of honey.

5. Scoop out small portions of the mixture and roll them between your palms to form balls approximately the size of a ping-pong ball. Try to keep the bites similar in size so they firm up evenly and are easy to serve.

6. Place the energy bites in a single layer on a parchment-lined tray or inside an airtight container. Refrigerate them for at least 30 minutes, or until they feel firmer and hold their shape.

How to Store Energy Bites

Store the energy bites in an airtight container in the refrigerator for up to one week. Keeping them chilled helps them stay firm and prevents the peanut butter mixture from becoming too soft.

You can also freeze them in a freezer-safe container. Place parchment paper between the layers to prevent them from sticking together. Allow them to soften for a few minutes at room temperature before eating.

Make It Your Own

One of the things I love most about this recipe is how easy it is to customize. I used natural creamy peanut butter, but almond butter or cashew butter would also work well.

You can change the chocolate chips, use chopped chocolate, or leave the chocolate out completely. You can also add shredded coconut, dried cranberries, raisins, sunflower seeds, pumpkin seeds, or a little ground cinnamon.

The chia seeds and granola are optional, so feel free to adjust them depending on what you have available. This is a very forgiving recipe, and it is easy to create a different combination every time you make it.

Helpful Tips

Natural peanut butter can vary in consistency, so make sure to stir it well before measuring. Rolled oats work best in this recipe because they give the energy bites a softer, chewier texture than steel-cut oats.

If the mixture feels too sticky to shape, refrigerate it for about 10 minutes or lightly dampen your hands before rolling. You can also use a tablespoon or a small cookie scoop to divide the mixture evenly and make smaller, more uniform bites.

These easy no-bake peanut butter energy bites are sweet, chewy, and wonderfully simple to prepare.

Make a batch at the beginning of the week and keep them in the refrigerator for a quick snack whenever you need one.
