Ingredients

  • 3 lb 5 oz (1.5 kg) fresh pumpkin, peeled, seeded, and cut into small chunks
  • 1 cup (200 g) golden granulated sugar, or regular granulated sugar
  • 1 cup plus 3 tablespoons (250 g) packed dark brown sugar, preferably muscovado for a richer flavor
  • 3–4 wide strips of orange peel, avoiding as much of the bitter white pith as possible
  • 2–3 tablespoons (30–45 ml) fresh orange juice, approximately the juice of ½ orange
  • 3 cinnamon sticks
  • 1 cup plus 1 tablespoon (120 g) pecans, finely chopped
  • 2 whole cloves (optional)
  • A small pinch of freshly grated ginger, approximately ⅛ teaspoon

Step 1: Prepare the Pumpkin

Start by peeling the pumpkin, removing the seeds and any stringy parts, and cutting the flesh into small, even-sized chunks.

You should have about 3 lb 5 oz (1.5 kg) of prepared pumpkin.

Smaller pieces will soften more evenly and make the cooking process easier.

Step 2: Combine Everything in a Pot

Place the pumpkin pieces in a large, heavy-bottomed pot.

Add the golden sugar, dark brown sugar, orange peel, fresh orange juice, cinnamon sticks, optional cloves, and a small pinch of freshly grated ginger.

Give everything a gentle stir to coat the pumpkin with the sugar and spices.

Don’t add the pecans just yet. We’ll add those later to keep their lovely texture.

Step 3: Cook Slowly Until Soft

Place the pot over low heat and allow the pumpkin to cook gently for approximately 30 minutes, stirring occasionally.

As the pumpkin cooks, it will gradually release its natural juices, and the sugars will dissolve into a fragrant syrup.

Keep the heat low to prevent the sugar from burning. If the mixture looks too dry at the beginning, add a tablespoon or two of water.

After about 30 minutes, the pumpkin should be very soft and easy to break apart with a spoon.

Your kitchen should already smell amazing!

Step 4: Remove the Spices and Blend

Once the pumpkin is completely tender, remove the pot from the heat.

Carefully take out the cinnamon sticks, orange peel, and whole cloves, if using.

Using an immersion blender, carefully blend the cooked pumpkin until you have a smooth, creamy mixture.

I like mine really smooth because it makes the finished pumpkin butter perfect for spreading over toast or using in desserts.

Step 5: Add the Chopped Pecans

While the pumpkin is cooking, finely chop the pecans.

Once the pumpkin mixture is smooth, stir in the chopped pecans until they’re evenly distributed.

I love the little pieces of pecan in this recipe. They add such a nice texture and go beautifully with the pumpkin, cinnamon, and orange.

Step 6: Cook Until Thick and Spreadable

Return the pot to low heat and let the pumpkin butter simmer gently, uncovered, for another 15–25 minutes, or until it reaches your preferred consistency.

Stir frequently, especially as the mixture begins to thicken, to prevent it from sticking to the bottom of the pot.

Here’s my favorite way to check if it’s ready:

Run a wooden spoon through the center of the pumpkin butter, scraping along the bottom of the pot.

If the spoon leaves a visible trail that stays open for a moment before slowly closing, your pumpkin butter is ready!

This is a traditional way to test the consistency of homemade preserves, and it’s wonderfully simple.

Remember that the pumpkin butter will become a little thicker as it cools.

Step 7: Transfer to Jars and Enjoy

Carefully spoon the warm pumpkin butter into clean, heat-safe glass jars or food-safe containers.

Let it cool briefly, then cover and refrigerate promptly, within 2 hours of cooking.

Once chilled, the pumpkin butter is ready to enjoy.

Spread it over toasted bread, serve it alongside your favorite cheese, or use it to add a delicious fall flavor to homemade desserts.

Make It Your Own

One of my favorite things about homemade recipes is that you can always adjust them to suit your taste.

I love the combination of pumpkin, pecans, cinnamon, and orange, but there are plenty of ways to make this recipe your own.

– Skip the pecans: If you prefer a completely smooth pumpkin butter or need a nut-free version, simply leave out the pecans.

-Toast the pecans first: For an even nuttier flavor, lightly toast the pecans in a dry skillet before chopping and stirring them into the pumpkin butter.

-Adjust the warm spices: The cloves are completely optional. Leave them out for a milder flavor, or add a little extra ginger if you enjoy a warmer, spicier finish.

– Add a little extra orange flavor: Stir in a small amount of finely grated orange zest toward the end of cooking for a brighter citrus note.

– Make it more like a sauce: If you want to drizzle it over pancakes, waffles, or desserts, simply stop cooking a little earlier while the mixture is still slightly thinner.

Honestly, there’s no need to overcomplicate this recipe. The pumpkin, brown sugar, and cinnamon already create such a delicious combination!

How to Serve Pumpkin Butter

This is where this recipe really shines. It’s so versatile, and there are so many delicious ways to enjoy it.

I especially love it:

  • Spread over warm toast, toasted English muffins, or buttery biscuits.
  • Spoon over pancakes, waffles, or French toast.
  • Swirled into oatmeal or Greek yogurt for a cozy fall breakfast.
  • Served with creamy Brie, cream cheese, or sharp cheddar on a cheese board.
  • Used as a filling for homemade cakes, muffins, or pastries.
  • Spread onto puff pastry before baking for an easy fall treat.

It’s sweet, warmly spiced, and just a little nutty. A simple spoonful can make even an ordinary breakfast feel special.

How to Store Homemade Pumpkin Butter

Store your homemade pumpkin butter in clean, airtight jars or containers in the refrigerator and enjoy within 25-30 days.

For longer storage, freeze it in freezer-safe containers, leaving some room for expansion. For best quality, use within approximately 3 months. Thaw overnight in the refrigerator before serving.

Important: Homemade pumpkin butter is not suitable for shelf-stable home canning. Sterilizing jars, sealing them while hot, or turning them upside down does not make this recipe safe to store at room temperature. Always keep it refrigerated or frozen.
