Crispy Chicken Pasta Salad

This Crispy Chicken Pasta Salad is one of those simple meals that surprised me in the best way. I kept seeing crispy pasta all over social media and honestly wasn’t sure if it would live up to the hype. After trying it for myself, I completely understood why people love it.

The crispy pasta pairs perfectly with the fresh lettuce, crunchy breaded chicken, black olives, and homemade yogurt dressing. It is light but filling, perfect for hot summer days when you want something fresh, simple, and delicious that still feels satisfying.

The best part is that you can customize it with whatever ingredients you already have at home. Whether you make the crispy pasta version or simply use regular cooked pasta, this salad is fresh, delicious, and incredibly easy to prepare.

Ingredients

For the Salad

Serves 2

  • 1 cup bow tie pasta (farfalle)
  • Water, for cooking the pasta
  • Salt, to taste
  • 2 crispy breaded chicken fillets (store-bought)
  • 2 cups chopped romaine lettuce (about 1 small head)
  • 1/2 cup black olives
  • 1 batch Easy Yogurt Salad Dressing
  • Creamy balsamic glaze, optional

1. Wash and chop the romaine lettuce into bite-sized pieces. Set aside while you prepare the remaining ingredients.

2. Place the breaded chicken fillets in the air fryer and cook at 350°F (180°C) for about 15 minutes, turning halfway through cooking, until golden brown and crispy. Remove and set aside.

3. Bring a pot of salted water to a boil. Add the bow tie pasta and cook according to the package directions until al dente, about 7 minutes. Drain the pasta well.

4. Spread the cooked pasta on a sheet of parchment paper and place it in the air fryer. Cook for about 10 minutes, shaking the basket occasionally, until the pasta is lightly golden and crispy. Remove and let it cool slightly before adding it to the salad.

5. Divide the lettuce between two serving bowls.

6. Add the black olives and crispy pasta, then toss gently to combine.

7. Slice the crispy chicken and arrange it on top of the salad.

8. Drizzle generously with the homemade yogurt dressing.

9. If desired, finish with a drizzle of creamy balsamic glaze for extra flavor.

10. Serve immediately while the chicken and pasta are still crispy for the best texture and flavor.

Make It Your Own

One of the things I love most about this salad is how easy it is to customize. You can use rotini, penne, or any pasta shape you already have on hand.

If romaine lettuce is not your favorite, feel free to swap it for iceberg lettuce, mixed greens, or fresh spinach. For even more color and flavor, try adding cherry tomatoes, cucumber, or shredded carrots. A sprinkle of grated Parmesan cheese is also a delicious addition.

If you prefer a lighter version, replace the crispy chicken with grilled chicken. And if you are short on time, you can skip the crispy pasta step altogether and simply use regular cooked pasta. The salad will still be fresh, flavorful, and satisfying.
