These easy air fryer pesto tomato mozzarella toasts are one of my favorite quick recipes when I want something warm, cheesy, and full of flavor. Rustic bread is spread with basil pesto, topped with juicy tomato and fresh mozzarella, and finished with plenty of oregano.

I also added a little shredded four-cheese blend because I had some left over in the refrigerator. It is completely optional, but it makes the toasts extra cheesy and delicious. Serve them as an appetizer, a light meal with soup, or an easy snack for game days and casual gatherings. You can also use baguette slices to make smaller, bite-sized versions.

Ingredients
- 4 thick slices of rustic bread
- 4 tablespoons store-bought basil pesto
- 1 large ripe tomato, sliced
- 1 small ball of fresh mozzarella, about 4 to 5 ounces, sliced
- Salt, to taste
- Freshly ground black pepper, to taste
- Dried oregano, to taste
- ¼ cup shredded four-cheese blend, optional
- Additional dried oregano for topping
Instructions
1. Place the rustic bread slices on a clean work surface. Spread 1 tablespoon of basil pesto evenly over each slice, making sure to cover most of the surface.
2. Arrange the tomato and mozzarella slices over each piece of bread, alternating and slightly overlapping them. Depending on the size of your bread and tomato slices, you can add one slice of tomato, followed by mozzarella, and repeat until the bread is covered.

3. Sprinkle each toast lightly with salt and freshly ground black pepper. Add a generous amount of dried oregano over the tomato and mozzarella.

4. For an extra cheesy finish, sprinkle a little shredded four-cheese blend over each toast. This step is optional, but it gives the toasts a delicious golden, bubbly topping. Finish with another small sprinkle of oregano.

5. Carefully place the toasts in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to cook them in batches.
6. Air fry at 400°F (200°C) for approximately 7 minutes, or until the mozzarella is completely melted and the cheese on top is golden and bubbly. Cooking time may vary depending on your air fryer, so begin checking the toasts after 6 minutes.
7. Carefully remove the toasts from the air fryer and serve them immediately while the bread is crisp and the cheese is hot and melted for that irresistible cheese pull.

Serving Suggestions
These pesto, tomato, and mozzarella toasts make a delicious appetizer or easy snack, but they can also be served as a light meal with a warm bowl of soup or a simple green salad.
For parties, game days, or casual gatherings, use baguette slices instead of large pieces of rustic bread to make smaller, bite-sized pesto mozzarella toasts. Simply adjust the amount of pesto, tomato, and cheese to fit each slice and keep an eye on them in the air fryer, as smaller pieces may cook more quickly.
Make It Your Own
These toasts are very easy to customize with ingredients you already have at home. You can replace the four-cheese blend with shredded Parmesan, cheddar, or another cheese that melts well. Add thin slices of cooked chicken, turkey, or prosciutto for a more filling version, or finish the cooked toasts with fresh basil leaves for an extra burst of freshness.
For a little heat, sprinkle crushed red pepper flakes over the cheese before air frying. You can also drizzle the finished toasts with balsamic glaze for a sweet and tangy contrast to the pesto, tomato, and mozzarella.
