Easy Apple Oat Flour Cake with Greek Yogurt

This easy apple oat flour cake with Greek yogurt is soft, moist, and packed with fresh apples, warm cinnamon, and crunchy walnuts.

Made with simple ingredients and just a little brown sugar, it’s an easy homemade apple cake that works just as well for breakfast as it does for an afternoon snack or simple dessert.

Ingredients

  • 3 large eggs
  • Scant ½ cup (105 g) plain Greek yogurt
  • 2 tablespoons (28 g) coconut oil, melted
  • about 1 cup (110 g) oat flour
  • ¼ cup (about 50 g) packed brown sugar
  • 3 small apples, about 9 oz (250 g)
  • ¼ cup (30 g) chopped walnuts
  • 1 teaspoon (about 2.5 g) ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground ginger
  • 1 teaspoon (4 g) baking powder
  • A pinch of salt
  • Powdered sugar, for dusting, optional

Optional Topping

  • A small sprinkle of brown sugar
  • A pinch of ground cinnamon

Instructions

1. Preheat your oven to 350°F (180°C). Lightly grease an 8 × 4-inch loaf pan and line it with parchment paper, leaving a little overhang on the sides to make the cake easier to remove. If you are using a silicone loaf pan, you can simply grease it very lightly.

2. Peel and core the apples. Dice 2 apples into small cubes. Grate half of the remaining apple, then thinly slice the other half for the topping. Using the apples in three different ways gives this cake such a lovely texture. The diced apples create soft, juicy pieces throughout the loaf, while the grated apple adds extra moisture and the thin slices give the top a simple homemade finish.

3. Add the eggs and brown sugar to a large mixing bowl. Whisk for about 1 minute, until the mixture looks smooth and slightly lighter.

4. Add the Greek yogurt and melted coconut oil. Whisk again until everything is smooth and well combined.

5. Add the oat flour, cinnamon, nutmeg, ginger, baking powder, and salt. Gently stir just until you no longer see any dry oat flour. Try not to overmix the batter.

6. Fold the diced apple, grated apple, and chopped walnuts gently into the batter, making sure they are evenly distributed. The batter will be quite soft and moist because of the apples and Greek yogurt. That is exactly what helps give the finished cake its tender texture.

7. Pour the batter into the prepared loaf pan and gently smooth the top with a spatula.

8. Arrange the thin apple slices over the top of the batter. For a slightly sweeter and prettier finish, sprinkle a very small amount of brown sugar and cinnamon over the apples.

9. Bake for 40–50 minutes, or until the center feels set and a toothpick inserted into the middle comes out mostly clean with just a few moist crumbs. I recommend checking the cake at around 40 minutes. Because this cake contains plenty of fresh apple and Greek yogurt, you want the center to be fully baked without drying out the loaf.

10. Remove the cake from the oven and let it rest in the pan for 10–15 minutes. This is especially important because oat flour cakes are naturally tender when they are still hot.

11. Carefully remove the cake from the pan and transfer it to a wire rack to cool. Once cooled, dust lightly with powdered sugar if you like. Slice and enjoy.

Make It Your Own

One of the things I love about this apple oat flour cake is how easy it is to make it your own without changing what makes the recipe so good.

I use walnuts because I love the little bit of crunch they add to the soft apple cake, but pecans would be delicious too. You can also leave the nuts out completely if you prefer.

For the apples, varieties such as Honeycrisp, Pink Lady, Gala, or Granny Smith all work well. A slightly tart apple is especially nice because it balances the brown sugar and warm spices.

If you love cozy fall flavors, add a little extra cinnamon or a tiny pinch of apple pie spice. A splash of vanilla extract would also work beautifully here.

And if you want something a little more dessert-like, serve a slice slightly warm with Greek yogurt, whipped cream, or a small scoop of vanilla ice cream.

This cake is naturally very moist, so don’t worry if the crumb feels softer than a traditional loaf cake. That juicy apple texture is one of my favorite things about it.
