  • 2.2 lbs (1 kg) pork, cut into bite-sized cubes
  • 2.2 lbs (1 kg) sweet potatoes, peeled and cubed
  • 1 medium potato (about 0.5 lb / 225 g), cubed
  • 1 cup frozen chestnuts (optional)
  • 1/2 cup black olives (optional, for garnish)
  • 1/2 onion, sliced
  • 3 garlic cloves, minced
  • 1/4 cup chopped fresh parsley (plus extra for garnish)
  • 1 bay leaf

Marinade:

  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (or to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup white wine
  • 3 tablespoons olive oil

For cooking:

  • 1/2 cup water (to add with potatoes)
  • Olive oil (for sautéing)

Instructions / Step-By-Step

1) Place the cubed pork in a large bowl.

2) Add salt, cayenne pepper, garlic powder, paprika, white wine, olive oil, sliced onion, minced garlic, parsley, and bay leaf. Mix everything well until the pork is fully coated.

3) Cover and refrigerate for at least 4 hours (overnight for best flavor).

4) Heat olive oil in a large pot and sauté the onion until soft and translucent.

5) Add the pork with all the marinade. Cook on low heat for 20 minutes, stirring occasionally.

6) Add the sweet potatoes and regular potato. Adjust seasoning if needed (salt and cayenne). Pour in 1/2 cup of water.
