Ingredients

  • 3 large eggs
  • 2 cans tuna packed in olive oil, well drained
  • 1 tablespoon reserved olive oil from the tuna
  • 4 heaping tablespoons of mayonnaise, plus more if needed
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • A pinch of dried oregano
  • Crackers, crostini, or toasted baguette slices, for serving

Optional Add-Ins

  • 1 tablespoon Dijon mustard
  • Finely chopped fresh parsley

Instructions

1. Place the eggs in a saucepan and cover them with water. Bring the water to a boil and cook the eggs for about 8 minutes, or until the yolks are completely set and the eggs are hard-boiled.

2. While the eggs are cooking, drain the tuna very well.

3. Transfer the eggs to cold water to cool before peeling.

4. Before discarding the olive oil, reserve about 1 tablespoon. This little bit of flavorful tuna oil helps bring everything together and adds extra richness to the salad.

5. Peel the cooled hard-boiled eggs and place them in a medium bowl. Using a fork, mash the eggs until they are broken into very small pieces. Add the reserved tablespoon of olive oil from the tuna and mix it into the mashed eggs.

6. Add the drained tuna to the bowl. Using the fork, break the tuna apart while mixing it thoroughly with the mashed eggs.

7. Continue mashing and mixing until the tuna and egg are evenly combined and have a soft, almost spreadable texture.

8. Add 4 heaping tablespoons of mayonnaise, a pinch of salt, freshly ground black pepper, and dried oregano. Mix everything together very well until you have a creamy, smooth tuna salad. For an even creamier consistency, add another spoonful of mayonnaise until it reaches the texture you prefer.

9. Taste the tuna salad and adjust the salt, pepper, or oregano as needed. For extra flavor, you can stir in 1 tablespoon of Dijon mustard or some finely chopped fresh parsley.

10. Serve with crackers, crostini, or toasted baguette slices. You can also use it as a creamy filling for sandwiches or wraps.

Make It Your Own

For a little more tang and depth of flavor, stir in a tablespoon of Dijon mustard. If you prefer something fresh and bright, finely chopped parsley is a delicious addition.
